Shaanxi Roujiamo
Overview
I fell in love with Roujiamo in the 1980s, when I was a student. In Shaanxi, Roujiamo only cost 30 cents each. For students, it was both a satisfying and affordable option. But even though it's very cheap, you can't eat it every day, so you only buy one when you're greedy. Later, when I got married, I started to learn how to make it myself. Later, it became my family’s reserved food. Because I love making braised pork, eating Roujiamo is very convenient. In the past, relatives and friends also liked to come to my house to eat this. Three or five friends could finish more than a dozen cakes. Now I rarely invite friends to eat. After all, I have to be busy for a long time. Now when friends get together, unless they are special guests, they usually don’t eat at home. They are hosted by the hotel, which saves trouble. Nowadays, when I eat Roujiamo at home, I will only make it unless my loved one wants to eat it. Others basically don’t have this privilege.

Mix rice wine with 70 grams of water, add 100 grams of flour and mix into a paste. Keep warm and ferment until the batter is completely fermented and looks like a honeycomb

Add all the remaining flour, add one gram of alkaline flour, and knead into a relatively hard and smooth dough. Don’t let the dough rise again this time. Let it rest for 30 minutes (if it’s a hot day, let it rest for 10 minutes), because the Baiji bun used for Roujiamo is a semi-risen dough

After the dough is ready, divide it into about 80g pieces
