Grilled cold noodles
Overview
Grilled noodles, a local specialty snack in Northeast China. There are three types: charcoal grilling, teppanyaki grilling and deep-frying. At present, teppanyaki and deep-frying are mainly popular. The cost of grilled cold noodles is low and the taste is great, but eating too much is not good for the gastrointestinal tract. The cold noodles used are ordinary cold noodles in the early stage, and special cold noodles are used in the later stage (thinner and softer than the common cold noodles in the market, and do not need to be dried after processing), which are soft and can be eaten directly.

Heat a pan and add a small amount of oil. Keep the heat on medium.

Place the cold noodles flat in the pot, being careful not to spread. Spray some water. This depends on the humidity of the cold noodles. The cold noodles I bought are very dry and hard and easy to fall apart, so I added more water and almost cooked them in the water. This step can soften the cold noodles and make them easy to flip.

Wash the eggs and beat them in.

Stir until the cold noodles become a complete piece.

Turn over and spread the grilled cold noodle sauce evenly

Spread the garlic chili sauce evenly. Note that if you add too much, it will be very salty. If you want a sweet and sour taste, you can add vinegar at this step.
