Salty Pork Bone Stewed Apple Soup
Overview
I prefer salty pork knuckles. In addition to cutting off the skin and meat to enjoy, the bones are also great for soup. There will be a moderate amount of floating oil, just skim it off with a sieve. Add in the fruity sweetness of apples, gassho melons and carrots, and the soup tastes very delicious and naturally sweet.

Peel off the skin and meat and put it into the pressure cooker, add 5 slices of ginger and 1/3 of the water, and set the porridge setting for 30 minutes.

Core and cut the apple into cubes, cut the carrot into cubes and cut the gassho melon into cubes.

When the time is up, add the apples, carrots and gassho melon and cook for 10 minutes on the porridge setting.

After the soup is cooked, use a fine sieve to skim off the floating oil. When enjoying, add an appropriate amount of salt to enhance the flavor.
