Mongolian hand-grilled mutton
Overview
Hand-grilled mutton is the most traditional specialty dish of our Mongolian people. It will be on the dining table frequently in winter, and it is as indispensable as dumplings during the Chinese New Year. The preparation of Mongolian food is relatively simple and rough, because I used to be nomadic and had no cooking conditions. But because the mutton in Inner Mongolia is so delicious, it is the most delicious thing in the world if you cook it casually!

Add ginger slices to cold water and cook lamb chops. After the water boils, remove the foam and drain the lamb chops.

Prepare ingredients: green onions, ginger slices, whole cloves of garlic, star anise, Sichuan peppercorns

Put the lamb chops and ingredients into the pressure cooker. Add water to level with ingredients. Add appropriate amounts of salt, light soy sauce, and cooking wine. Select "Meat" in the pressure cooker and start cooking.

Make the sauce: Add appropriate amounts of light soy sauce and dark soy sauce to minced garlic. This sauce must be prepared, it is super delicious when dipped in lamb chops.
