A fresh Spanish mackerel can be frozen first and washed. It is easier to cut that way

Cut the Spanish mackerel into thick slices of about 1-1.5 cm. Because my fish is frozen, I cleaned the internal organs after cutting it.

Add oil to the pot. The amount used for cooking is about twice as much as usual for cooking, because the fish has not passed through the oil. Add the ginger and green onions and then the fish fillets. Use a quick Yunnan spoon to prevent them from sticking to the pot. Then add water.

While waiting for the water to boil, you can start seasoning. Add a little dark soy sauce, brown sugar, vinegar, and cooking wine. Brown sugar is added because it helps the fish color. Add the amount of brown sugar and vinegar according to your own taste. You can taste it after the water boils.

Dry the water in the pot over low heat. When the water is almost dry, pour in a little water starch to make the fish taste stronger.
