Making the inversion syrup yourself is simple and delicious, and you can control the sweetness and sourness yourself. This syrup is mainly used when making mooncakes. Mooncakes added with invert syrup are softer and have a better taste. Not that hard.

Pour the sugar into the stainless steel pot

Add water and boil

Squeeze the juice from the lemon

After boiling, pour in the lemon

Do not stir during the whole process, use a brush dipped in water to brush the sugar granules around the pot for about 30-40 minutes
