Soak the pork bones in water for half an hour and soak in the bleeding water

Boil the pork bones and clean them

Prepare a pot. I used a cast iron pot. Add the first generation Xiangqi sauce to boiling water, no more than the pork bones, green onions, ginger, light soy sauce and cooking wine. Bring to a boil over high heat for a few minutes to allow the cooking wine to evaporate and take away the fishy smell. Cover the pot and simmer for an hour (mainly depends on how well done the meat is). Add an appropriate amount of salt if you can use chopsticks to move it, and simmer until soft.
