Red bean and candied dates rice dumplings

It’s another year when rice dumplings are fragrant. Although there are all kinds of rice dumplings on the market, our family still likes to make our own rice dumplings. Making our own rice dumplings is clean, hygienic and affordable! I like bean rice dumplings and bacon flavor the most. Dear friends, what flavor do you like? I soaked the rice and beans last night and wrapped them until this afternoon. I cooked them immediately after wrapping them. My mother-in-law kept praising how delicious they were, haha. I was so happy to see my family eating happily!

Soak the rice dumpling leaves one night in advance and press them with a bowl to prevent them from floating up. This is dried rice dumpling leaves. If you use fresh rice dumpling leaves, you should soak them for about an hour and then cook them!

Soak red beans, peanuts, and white beans overnight in advance for at least 8 hours

Soak the glutinous rice one night in advance for at least 8 hours

Wash the rice dumpling leaves, boil them in cold water for about 10 minutes, and then soak for about 20 minutes

Drain the leaves, glutinous rice and beans for about half an hour

Cut off the leaves and roots

I made two portions of glutinous rice, one with brown sugar powder and one without. Depending on your preference, add an appropriate amount of brown sugar powder

Stir evenly with a spoon and let it sit for about 20 minutes

Take two rice dumpling leaves, roll them up a little, overlap them, and then roll them into a funnel shape!

Add glutinous rice and poke it with chopsticks a few times until it becomes sticky

Put in a red bean, a large white bean, a peanut, and a candied date. In each case, at least one large white bean and one candied date should be placed

Scoop another spoonful of glutinous rice, 9 minutes full

Fold the tail over, use the tiger's mouth of your left hand to create a zongzi shape, press down the leaves with your right hand, don't let go, and create a triangle

Then wrap the tail around the body of the rice dumpling until it is finished

Use cotton string to cover it firmly and be sure to bundle it tightly

Pour enough water into the pressure cooker, add the rice dumplings, bring to a boil over high heat, then simmer over low heat for 40 minutes, turn off the heat, and simmer until the pressure naturally subsides, then you can eat. If you have an ordinary pot, bring to a boil over high heat, then simmer over medium to low heat for one hour, and then simmer for half an hour before you can eat!
