Pineapple Omelet Rice
Overview
Although it is called pineapple omelette rice, there is no pineapple added. It just looks like a pineapple. If you happen to have pineapple at home, you can add it to the fried rice. It will be a true pineapple omelette rice!

Beat two eggs with a little salt and two spoons of water starch. The water starch is added to increase the toughness and make the egg skin less likely to break.

Heat a pan over low heat, apply thin oil to the pan, pour in the egg liquid, and rotate the pan to spread the egg liquid evenly on the bottom of the pan. Fry it into a round egg cake. You don't need to turn it over. Once the surface is solidified, you can remove it from the pan.

Cut the omelet into strips the width of your index finger.

Use a paring knife to scrape the cucumber vertically into thin slices, and cut it into strips the width of your index finger.

Weave egg strips and cucumber strips into egg pancakes using the flower basket method, as shown in the picture. Lift up every other egg strip and put in cucumber strips. You can see the color of the side of the egg pancake that is close to the bottom of the pot. This is why you don't turn the omelette over when you make an omelette. Make sure that the color of the surface is beautiful. If you turn it over and stick it to the bottom of the pot, there will be streaks.

Then put the egg strips down, stagger the previous row, and continue to lift every other strip and put cucumbers on it.

Overnight rice is fried with an egg, chopped green onion and a little salt.

Remove the tendons on both sides of the snow peas, wash them, blanch them in boiling water, let them cool and drain them, and arrange them on a plate in the shape of pineapple leaves. When blanching the snow peas, add some salt and oil to the water so that the blanched color will be emerald green.

Put the fried rice into a plate and use a spoon to arrange it into a pineapple shape, narrow at the top and wide at the bottom.

Then cover the braided egg cake on the rice. Be careful not to scatter the egg cake when moving it. I inserted two kitchen knives left and right under the egg skin to lift it up and cover it on the fried rice.

Just use kitchen scissors to cut off the excess part. Don’t waste the cut part, just throw it into your mouth😄

I buy a lot of snow peas, and they are delicious when fried with sausage and served with fried rice.
