Leek and Clam Patties

Pick, wash and drain the leeks and chop into small pieces.

Remove the meat from the clams and set aside.

Add flour to a large bowl and add milk to form a batter.

Beat in eggs and mix well.

Add clam meat and mix well.

Add chopped leeks and mix well.

Add salt and mix well.

Pour oil into a non-stick pan. When the oil is hot, pour in the batter and turn the pan to make the batter even. Fry over low heat.

Fry until both sides are golden brown and then take out and serve on a plate.
