Slaughter the fresh grass carp, drain the water, cut into small pieces (take the meat, fish head and the big bone in the middle to make soup), marinate with a small spoonful of salt for about an hour.

Spread a little cornstarch on each piece of fish.

Add an appropriate amount of cooking oil to the pan, heat it over high heat, add the fish pieces, and fry over medium heat until slightly browned.

Turn over and fry again until lightly browned.

Flip again and fry until golden brown.

Fry the sides too until golden brown.

Pour in soy sauce and turn to low heat.

Carefully turn the fish pieces over so that each piece of fish is evenly coated with soy sauce.

Turn off the heat and serve.
