Cut the lean meat into strips or small pieces as you wish

Pour dry starch directly onto the meat

After stirring, add 2 tablespoons of oil and stir (this dish is not delicious when made at home due to insufficient heat. This is one of the reasons. The biggest reason is the paste problem. People often ask me whether to use starch or flour to make the paste (because there are different types of paste). Several kinds), here I can answer. When making meat at home, you can use starch paste alone or 3 parts of starch to 1 part of flour. No matter which gouache you use, if you want to have a crispy texture, remember one thing: add some oil to the gouache to make it crispy)

Fry at 70% oil temperature. If the oil temperature is too low, the batter will fall off easily. After the first frying, take out all the meat. When the oil temperature rises again, pour the meat pieces back into the oil pan and fry again. (The purpose is to make it crispier). It is recommended to put the meat segments into the oil pan in batches for frying, otherwise the oil temperature will drop suddenly and affect the frying effect

After frying twice, remove and control the oil and set aside

Slice the peppers and chop the onions and garlic (I didn’t add carrots in this one, it’s better to add some color)

Bowl of juice, salt, pepper, starch, chicken essence, sugar, light soy sauce or steamed fish soy sauce. Add less dark soy sauce. If you want a beautiful color, add some tomato sauce. Remember it is not tomato sauce, then add water, stir and set aside (I did not add tomato sauce in this one). (For sweet and sour flavor, add sugar, vinegar, and ketchup. For sweet and sour flavor, do not add seasonings to enhance the flavor.)
