In Changde, Hunan, when visiting relatives and friends during the New Year, the host will give you a piece of Sicha (egg tea). At first I thought it was tea. The first year I went to my parents-in-law’s house, I saw them boiling a big pot of tea eggs. I was very curious, but later I said it was for the guests to enjoy during the Spring Festival. There are many kinds of egg teas. When I visited relatives with my father, I tasted spicy braised vegetables, tea-flavored eggs, and stuffed eggnog. My Sweet Potato Girl said that as long as the meaning remains the same, the taste can be changed at will. So this year we made braised eggs with gravy. The color and taste are both excellent. And add a little dried tofu when braised eggs, so you have another snack.
