Shepherd's Purse Egg Custard

Pick and wash shepherd's purse

Add fine sugar and mix the eggs with chopsticks or a whisk. Because I think shepherd's purse is a bit bitter, I added some sugar. If you like the original taste of shepherd's purse, you don't need to add sugar.

Pour an equal amount of shepherd's purse juice into the eggs and stir evenly. Filter out the foam so that the steamed egg custard has no bubbles. To save trouble, I used a small colander and scraped off the surface without filtering.

Seal it with plastic wrap so that water vapor cannot enter the bowl, the surface is smooth, and the egg custard is still quite tender even if it is slightly over-steamed.

Put enough water in the steamer, place the bowl on the steam curtain, bring to a boil over high heat, and it will be cooked in 15 minutes. My bowl is relatively deep, if the bowl is shallow, the time will be appropriately reduced. As long as the egg custard in the center of the bowl is solidified, it's done.
