Heavy flavor temptation---durian light cheese cake

Maybe you and I have similar tastes and love the taste of durian, or maybe you just can’t stand the taste. It doesn't matter, this thing is a matter of opinion. However, I advise you not to give up on it easily if you haven't really tried it. Maybe it is the soulmate you have been looking for for a long time.

Add 10 grams of sugar and butter to the cream cheese and melt over water. Stir until there are no grains.

Add pure milk and mix well.

Add egg yolk and mix well.

Peel the durian and crush into puree.

Add the durian meat to the egg yolk paste and mix well.

Sift in the flour and mix well.

Add a few drops of lemon juice to the egg whites and beat on low speed until coarse foam forms.

Add 30 grams of fine sugar in three batches and beat at medium speed until wet peaks form, about 7 minutes.

Add 1/3 of the egg white to the egg yolk batter and mix evenly.

Pour back into the egg whites and mix quickly to combine.

Pour the batter into the mold, shake it lightly on the table a few times to remove the air bubbles inside, put it into a flat baking pan, pour warm water into it about 3/4 of the way up the mold, bake it in the oven at 170° for about 20-30 minutes, then turn to 150 degrees for 40 minutes.

Take out of the oven and remove from the mold after cooling.
