Pocket cake
Overview
As the name suggests, pocket cakes are shaped like pockets. As for what to put in your pocket, it depends on your own preferences. I fried shredded potatoes and carrots and put them in my pocket. You can also put some cucumber, ham or salad dressing and other ingredients. This way of eating is very unique, and it’s great to give it to your family every now and then. In addition, this pocket cake can also be made with fermented flour, steamed or baked.

Prepare flour

Slowly pour in the flour with boiling water of about 70 degrees Celsius, stirring with chopsticks while pouring.

Dip your hands into cold water, knead the noodles into a dough, and let it rest for about twenty minutes to half an hour.

Prepare vegetables (prepare according to your preference)

Cut potatoes and carrots into shreds and set aside (soak potato shreds in cold water)

After the dough has risen, roll it out.

After the dough is rolled out thinly, use a knife to cut off the four sides to form a neat four-sided shape as shown in the picture.

Use a knife to cut into long pieces of dough about 30CM long and 10CM wide (according to your preference)

Then brush oil on the long middle section of the dough piece

Then fold it in half into a pocket shape as shown, and press the two sides tightly (you can stick some water on both sides)

Brush the pan with thin oil and put in the pocket cake dough

Flip and sear both sides until slightly brown

Heat up another pan, heat oil, add onion, ginger and pepper and sauté until fragrant. Add reserved shredded potatoes and carrots and stir-fry

Finally added a little onion shreds. Add salt and other seasonings and stir-fry. Add a little vinegar before serving.
