Blueberry Cake Roll
Overview
I often make cake rolls, but I don’t like cream, so I would like to use some blueberry jam as a filling. It is sweet and sour without any burden

Prepare materials, mix cake flour and cornstarch

Separate the egg whites and egg yolks. The container must be oil-free and water-free. Put vegetable oil and fine sugar into the egg yolks

Beat the egg yolks with a whisk until emulsified

Add warm water and mix well, sift in the flour and mix well

Add salt to the egg whites, beat with a whisk until fine foam, add all the fine sugar

Beat until the meringue pulls out small curved hooks

Take 1/3 of the meringue and egg yolk paste and mix evenly

Pour the mixed batter back into the meringue and continue to mix evenly

Pour all the mixed batter into a baking pan lined with oilcloth, and scrape the surface roughly even

Place in the middle and lower racks of a preheated oven at 160 degrees and bake at 160 degrees for 20 minutes. Take out the cake after baking, invert it upside down and let it cool. Tear off the oilcloth

Spread an appropriate amount of blueberry jam on the cake

Roll up and shape slightly before cutting
