Stir-fried sour bamboo shoots
Overview
My mother-in-law grew these bamboo shoots and pickled them myself. I brought a big one back when I went home a few days ago. I haven’t finished it yet, so I started cooking it again today.

Wash the pickled bamboo shoots and cut into strips, cut the pork belly into thin slices, cut the green onion into sections, shred the red pepper and set aside,

Pour oil into the hot pan, then add the pork belly and fry until the oil is released.

Fry the pork belly, add scallions and red pepper and sauté until fragrant.

Add the sour bamboo shoots and continue to stir-fry.

Finally, add chopped green onion, seasoning, and serve.
