Tomato, Lotus Root and Pork Ribs Soup
Overview
Spare ribs are rich in nutrients, and tomatoes are rich in vitamin C. I happened to have some lotus root left at home that day, so I cooked a tomato, lotus root and pork rib soup.

Clean the ribs, add a little salt and cooking wine, and marinate for 20 minutes.

Pour off the marinated blood from the marinated pork ribs, put them into the pot, add water, add ginger slices and Sichuan peppercorns.

Boil the ribs and skim off the foam. Simmer for half an hour, add the chopped lotus root and simmer over medium heat for half an hour. Finally add the tomatoes and simmer for about 10 minutes.

Add a little salt and MSG to taste, put it in a bowl, and sprinkle with some chopped green onion.
