Wash the chicken breasts

Cut chicken breast into cubes and set aside.

Wash the fresh lotus root, set aside ginger, onion, garlic, dried chili and star anise.

Dice fresh lotus root and set aside. Note that fresh lotus root should not be left for a long time after being cut into cubes as it may change color.

After the chicken breast is fried until fragrant, add diced lotus root and appropriate amount of sauce, stir-fry for about 10 minutes, add a small amount of water, chicken essence, and stir-fry.

Plate it, add white rice, and eat with it.
