Preparation: Bitter melon, eggs, scallops

Cut the bitter melon into thin slices, beat the eggs, add salt and a little water, soak the scallops in warm water for 15 minutes until they soften and tear into pieces, smash the garlic and set aside

Pour oil into the pan and stir-fry the egg liquid until loose, then serve

Add oil and stir-fry shredded scallops until fragrant, then add garlic and sauté until fragrant

Add the bitter melon, add salt and stir-fry until soft, then pour in the water used to soak the scallops
