-
For mandarin fish, cut off the fish head, take out the fish bones, then cut four times horizontally, and then make diagonal cuts.
-
Add water to the pot, add some green onion and ginger, let it cool, and soak the cut fish in it to remove the fishy smell.
-
After soaking for fifteen minutes, remove and drain.
-
Coat evenly with starch.
-
Shake off excess starch.
-
Arrange in a colander.
-
Heat the oil in the pot until it is 70% hot.
-
Put in, fry until cooked, remove and control oil.
-
Add oil to the pot, sauté the remaining onion and ginger until fragrant, then pour in the tomato sauce and cook, thicken it and pour it on the fish, sprinkle some white sesame seeds, and it's done.
