Tomato Egg
Overview
This tomato egg should actually be understood as thin egg slices dipped in tomato sauce. Thin egg slices dipped in sweet and sour tomato juice are the best mixed rice. Children also love to eat it. Just this one dish can eat a big bowl of rice,

Ingredients
Steps
-
Peel the tomatoes and cut them into crescent shapes (for peeling, you can use a spoon to scrape the skin, and then you can easily tear off the tomato skin)
-
Blanch the other one with a little water, cut it open, hollow out the tomatoes inside, and press it into tomato juice,
-
Heat oil in a pan,
-
Put the crescent-shaped tomatoes into the pan and stir-fry for a while,
-
Pour in the tomato juice, add a little water and simmer until the crescent tomatoes are soft,
-
Add sugar and stir-fry for a while,
-
Serve in a bowl and set aside,
-
Beat the eggs into a uniform whole egg liquid,
-
Spread oil evenly in the pan and heat until 50% hot,
-
Pour in part of the egg liquid, (I divided the two eggs three times to spread the cake,)
-
Set one side slightly, then turn over and continue frying over low heat,
-
Cut the fried egg pancake into small pieces as you like,
-
Just cover it with tomato sauce. Eat the thin egg slices dipped in tomato sauce. It is different from the half-tomato scrambled eggs, but it also has a different flavor.
