Stir-fried mutton with cumin and green onion
Overview
Stir-fried mutton with green onions must be stir-fried over high heat to make it fragrant, but for the sake of safety at home we definitely cannot do this, and the oil that emits smoke over high heat is carcinogenic, so it is not recommended to eat it regularly. Today I will share with you the improvement method I researched. If you make it, please share your suggestions whether it tastes good or not.

If your supermarket sells this, you can buy a pack. It is not spicy and can add color and fragrance.
-
Add 1 spoon of ginger powder, 1 spoon of cooking wine, a few peppercorns and half a spoon of chicken essence to the mutton, stir well and marinate for 10 minutes.
-
Put the meat in cold water. When the water boils, add a piece of galangal. Cook for 5 minutes and take it out (pick out the peppercorns and ginger). Put the mutton aside and drain. Make sure it is as dry as possible.
-
After frying the mutton oil, add mutton and fry.
-
Stir-fry until it changes color and add the chopped green onions.
-
Add 1 tablespoon light soy sauce, 1 tablespoon oil, and a little salt.
-
Add the chili packets and stir-fry (open the mouth wide and pour it all in. When you make it, you only need one-third. If you don’t have the chili packets, fry some chili peppers and peanuts in advance, and then add a little cumin powder to taste.

Stir well and serve. If you have sesame seeds at home, you can add a little sesame seeds to garnish. It's really delicious.
