Cut the ribs into cubes and add ginger slices to the pot and cook for 5 minutes.

Rinse the ribs, drain and set aside.

Put a little oil in the pot, add rock sugar, and stir-fry over low heat until it turns red. (The sugar must be fried over low heat)

Add boiling water to the sugar color, add the pork ribs and stir-fry until browned.

Add ginger slices and scallions.

Add boiling water (just enough to cover the ribs), add a tablespoon of sugar, a tablespoon of aged vinegar, a spoonful of dark soy sauce for color, and then add two spoons of light soy sauce for seasoning. Cover and simmer for 20 minutes.

Then add a spoonful of white sugar and a spoonful of mature vinegar, and reduce the juice over high heat. Keep weighing the pot and turning the ribs to avoid sticking to the pan.
