Chicken legs stewed with potatoes

Cut the potatoes into cubes, cut the green peppers into large chunks, cut the beans into sections, cut the green onions into small sections, and cut the coriander into large sections

Chop chicken legs into pieces and set aside

Pour chicken pieces into a pot with cold water, bring to a boil over medium heat, remove any foam, remove the chicken pieces, drain and let cool

In a cold pan, add all the dried peppercorns and aniseed ingredients in a cold pan and stir-fry over low heat until fragrant. Add the chicken pieces and stir-fry for a few times

Add dark soy ginger powder and stir-fry for a while to release the flavor

Add boiling water just enough to cover the chicken pieces, bring to a boil over high heat, remove the foam, then reduce the heat to low and cover and simmer for half an hour

Add potatoes and beans and continue to simmer for fifteen minutes. Add green peppers and simmer until cooked through

Add appropriate amount of salt and scallions, reduce the sauce over high heat and turn off the heat. Add chicken essence and serve on a plate. Sprinkle a little coriander for garnish to enhance the flavor.
