Matcha Honey Bean Cupcakes

Separate the egg whites and egg yolks, and put the egg whites into an oil-free and water-free egg beating basin;

Pour the oil and milk into the egg yolk bowl and stir gently;

Pour in the sifted cake flour and matcha powder, and use a manual whisk to stir from the outside to the middle (quickly); add more than 5 grams of milk until the batter becomes smooth.

First, beat some fish eye bubbles at low speed, add sugar and lemon juice; (Preheat the oven for 10 minutes in advance, and set the heat to 170 degrees)

Adjust the medium speed to level 3 (coarse level 1). When the egg whites form fine foam, add one-third of the sugar;

Continue to beat until the egg whites are thicker and lines appear on the surface, add the remaining sugar and beat at high speed. When lifting the egg beater, beat the egg whites until they are like a chicken tail (pull up the small curved hook); scoop out a piece with your fingers and there will be short sharp edges at both ends, and the egg whites in the basin will be straight.
