Wash and slice lotus root

Boil water in the pot for three minutes, rinse twice with cold water, and drain the water (it’s best not to use an iron pot for stewing, I can’t use it, so it’s a little black)

Prepare green peppers, dried peppers, and chopped garlic

Heat oil in a pan, add minced garlic and dried chili and sauté until fragrant

Add lotus root and green pepper, stir-fry quickly over high heat for a few times, then add spicy fresh vegetables, salt

Then stir-fry quickly over high heat. If it's too dry, add some water. After frying to dry up the water, you can still smell the caramel flavor. Add a few drops of vinegar and fry for two or three times before serving
