Heat the oil, stir-fry the peppercorns, star anise, bay leaves, fennel, cinnamon and ginger cubes over low heat.

Add the blanched tripe.

Add salt and simmer for five minutes.

Turn the pot and steam for an hour.

Steam until mashed, pour into a casserole, add radish and cook for fifteen minutes.

Finally add the celery and it's done.
