Chop the cured bladder and backbone into pieces and soak in water to remove the blood.

Soak the kelp until it swells, rinse well.

Cut into small pieces with a diagonal knife.

Wash the bacon and backbone and put them into a pot of cold water and boil.

Wash off the blood foam again and slice the ginger into slices.

Put it into an electric pot and add 1 spoonful of cooking wine.

Add kelp, add enough boiling water and simmer until the meat is tender (about 2 hours)

Add salt half an hour before simmering, and pepper to taste when serving.

Serve in a bowl and sprinkle with chopped green onion.
