Ingredients
Steps
-
Wash chicken feet
-
Cut off the nails of the chicken feet one by one
-
Heat the pot
-
Heat the oil pan until it smokes slightly
-
Prepare ginger, garlic, Sichuan peppercorns, and bean paste
-
First turn down the heat, add a spoonful of bean paste, fry until the oil turns red, then add ginger, garlic, star anise and peppercorns over high heat and saute until fragrant
-
Add chicken feet and stir-fry evenly
-
Add appropriate amount of soy sauce and continue to stir-fry until the chicken feet are colored
-
Add the stock, level with the chicken feet. Cover the pot and simmer over medium heat for 15-20 minutes. (I didn’t have any stock, so I used boiled water)
-
Simmer until the soup is thick and the juice is reduced over high heat
-
Put it on the plate, because soy sauce is salty and bean paste is also salty, so I didn’t add salt
