People in Guangzhou prefer to drink soup, especially Laohuo soup. My family cooks it probably 3 or 4 times a week. Soak dried cabbage in water until soft and cut off the roots. Usually I soak it for about 2 to 3 hours. If you don’t have time, wash it off and soak it in warm water for about 30 minutes.

Soak the mushrooms for 2 to 3 hours, squeeze out the water repeatedly during the process and then soak in clean water. I often get lazy and just squeeze it dry once before making soup. It doesn't really matter, the soup will be just as rich and delicious anyway. The picture above shows the mushrooms that have just been soaked.

Soak the aged kidneys in water until soft, then cut into slices or shreds. Because the Chen Shen I bought was too dry, I had to soak it for 6 to 8 hours. You can soak this time according to the dryness or wetness of your own Chen Shen. Sometimes I suddenly want to drink soup and don't have time to make it, so I wash an extra piece of Chen Shen and throw it into the pot directly. The taste is the same.

Buy the big and fat ones so that the calcium in the soup is easier to absorb and tastes better. The person selling the pig has a good knife, so just ask someone to chop it up and take it home and rinse it.
