Braised old hen with Hericium mushrooms

It’s been a long time since I bought Hericium erinaceus. I have never been exposed to Hericium erinaceus. I only know how to make soup after buying it, but I always forget it. This time I put the Hericium erinaceus in front of me and bought a whole chicken to roast. I brought half an old hen back to make soup. Hericium erinaceus is very good for the stomach, and yam is also a very nourishing ingredient for the stomach, so this soup is relatively nourishing and healthy

Soak Hericium erinaceus with water after washing. The Hericium erinaceus will be very big after soaking. One or half of the Hericium erinaceus is enough, then tear it into small florets and soak it for about two to three hours

Wash the old hens and chop them into large pieces. The pork bones are the kind of pork ribs that you buy without meat, which can make the soup taste richer.

Put all the ingredients except salt into the pot, (remove the shells of the red dates) and pour in enough water

Bring to a boil over high heat, skim off the foam and oil, and simmer over low heat for 2-3 hours

Peel the yam and cut into small pieces

After simmering the soup for 2 hours, add the yam and continue simmering for 1 hour
