Set the mixed egg yolk batter aside for later use. At this time, you can preheat the oven to 170 degrees for 10 minutes

Take out the egg whites from the refrigerator, add a few drops of white vinegar or lemon juice and beat until the fish has bubble eyes. Add the first amount of caster sugar

Continue to beat until light lines can be seen, then add the second amount of sugar

Beat at medium speed until the egg whites become fine and foamy. Beat until the large curved hook pulled up by the meringue bends down, which means it is ready, (as shown in the picture)

Pour 1/2 of the meringue into the egg yolk paste, and use a manual egg beater to quickly stir from bottom to top

Then pour the previously mixed egg batter into the egg white batter, and stir until the meringue is no longer visible

In a small bowl, scoop a little cake batter and matcha powder and mix evenly

Mix well and pour into the cake batter

Just stir it irregularly for a few times

Pour the cake batter into a 28*28 golden baking pan in a French bakery mold from a height of 20 cm, and shake gently on the table to release air bubbles

Put it in the oven and heat it at 150 degrees Celsius and 170 degrees Celsius for 18 minutes
