Dissolve 250 grams of flour, 3 grams of yeast, and 5 grams of white sugar in warm water. The water should not be too hot. I use a bread machine to cool this dough.

Steam the pumpkin, puree it, let it cool, (not too hot), add 250 grams of flour, 3 grams of yeast, mix the yeast into the pumpkin puree, and slowly add it to the flour.

Knead the dough and cover it with plastic wrap.

Heat hot water in the pot, about 30℃, not very hot (it will burn the yeast). Put the dough inside, cover it and wait for fermentation.

Knead the dough again, deflate the dough, and knead it into the original size. Divide it into 4 large balls. I make two kinds of steamed buns.

Shell buns must be fermented for the second time before steaming. I did the same as the first fermentation. Put hot water in the pot and put it in for 10 minutes.

Steam over high heat for about 15 minutes, then turn off the heat and simmer for 2 minutes.
