Overview
Stewed Chicken with Potatoes, a dish that my children like to eat, uses chicken breast, because the children say that this meat has no tendons or bones and is delicious to eat. In fact, it would taste better if it were replaced with chicken thighs.

Dice potatoes and chicken breast separately.

Marinate the diced chicken with cooking wine, pepper, egg white, and starch.

Add appropriate amount of oil in the pot, sauté the onions, add the diced chicken and stir-fry until white.

Add potatoes and stir-fry.

Add one star anise, water, soy sauce, and salt and simmer.
