Hand cake
Overview
The freshly made hand cakes are stacked in thousands of layers, and the layers are as thin as paper. When you grab it with your hands, the dough is entangled. The outer layer is golden and crispy, and the inner layer is soft and white!

Add 120 grams of boiling water to the flour and stir continuously to form a snowflake shape, then add 50 grams of cold water

After cooling, knead into dough and let it rest for thirty minutes

Heat the corn oil and pour it into the chopped green onions to form green onion oil

Knead the rested dough for another five minutes and roll it into a sheet. Spread a layer of scallion oil and sprinkle with salt and pepper

Fold both sides to the middle and brush with a layer of scallion oil

Flip and fold again and apply scallion oil

Fold in half

Roll up the layered side toward the middle, flatten gently and roll into a thin pancake
