We dry our own peppers and sell our local spicy millet! Dry it in the sun, then stir-fry until fragrant, use a food processor to grind into chili powder and set aside, stir-fry sesame seeds until fragrant and set aside!

Put the sesame chili noodles in a large bowl and set aside

We don’t have canola oil here, so I chose to use peanut oil! Pour peanut oil into the pot, bring to a slow boil over low heat, and put your hand on top of the oil to see if it is hot. When the oil is 60% hot, add ginger slices and scallions and fry slowly. If the oil temperature exceeds 80%, turn off the heat and let it dry for a while, then turn on the heat and continue frying. When the ginger and scallions are almost dry, add star anise, cinnamon, cumin, and Sichuan peppercorns and continue frying. After the smell comes out, use a filter spoon to pick up the residue!

Pour 80% of the hot oil into the sesame chili noodles first, stir evenly, and then continue pouring the remaining part! If you pour all the oil at once, the air bubbles will overflow. Furthermore, if the oil temperature is too high, the chili batter on top will be bitter!
