Dongpo Pork Roasted Winter Bamboo Shoots
Overview
I bought this little bamboo shoot egg last year, and I’m going to buy a new one this year. I haven’t finished eating this one yet, so I quickly soaked it and ate it. The bamboo shoot eggs are the best quality among the winter bamboo shoots. They are so small that they do not exceed the palm of my hand after soaking. They are very tender. I happened to make a lot of Dongpo pork, so I used Dongpo pork to cook winter bamboo shoots. The bamboo shoots absorbed the aroma of the meat and were very delicious.

Winter bamboo shoots soaked in water

Cut it in half and you can see how tender it is. It is small and plump. After cutting a few pieces, an 8-inch plate is not covered

Slice vertically

Add oil to the pot and sauté the onions, ginger and pepper, then add the bamboo shoots

Stir-fry for 2-3 minutes to fully bring out the fragrance of the bamboo shoots

Take appropriate amount of Dongpo Pork

Pour Dongpo Pork with some soup

Add a little extra soy sauce or light soy sauce. If the salt is not enough, add a little more salt. Cover and simmer for 2-3 minutes to let the meat flavor soak into the bamboo shoots.
