Dongpo Pork
Overview
When making Dongpo Pork at home, I saw that it was simmered on low heat for 2 hours. I am impatient and lazy, so I decided to use an electric pressure cooker to shorten the cooking time!

Soak pork belly in bleeding water, wash, remove and drain

Put into the electric pressure cooker and add cooking wine and ginger slices

Add some aniseed

Pressed for 20 minutes

Take it out and cut into small cubes

Take a casserole and cover the bottom with ginger slices, garlic and onion knots

Put the meat on top

Add cooking wine, light soy sauce, dark soy sauce, rock sugar and an appropriate amount of juice just pressed in the electric pressure cooker. The specific amount of seasonings should be adjusted according to your usual cooking taste!

Put the lid on and bring to a boil over high heat, then reduce to low heat and simmer for 30 minutes. Be careful of sticking to the pan. Taste to see if you need to add salt

This is what it looks like after simmering for 30 minutes, the juice is thickened

Take the meat out, put it in a bowl, put it on the steamer and steam it for 15-20 minutes

Turn the steamed meat upside down and pour on the juice from the final stew. You can serve it with some vegetables
