Potato and eggplant stew

Overview

When I was a kid, I would cook potatoes and eggplants and add green onions and bean paste to serve as a salad. Today I’m going to share a recipe for braised potatoes and eggplants

  1. One green eggplant, one potato, two heads of garlic, appropriate amount of chopped green onion and minced meat

  2. Wash the eggplant and tear it open with your hands, peel the potatoes and cut them into pieces, put them in the steamer

  3. Cook for 10 minutes and put on a plate. When slightly cool, pound into small pieces with a spoon

  4. Mince onion and garlic

  5. Heat oil in a pan, add minced meat, chopped green onions and garlic and stir-fry

  6. Add a spoonful of miso

  7. Pour in eggplant and potatoes, stir-fry until chopped

  8. A pinch of salt

  9. A little chicken essence

  10. Remove from pan and plate
