Take out the dough and deflate gently, divide into 6 equal parts, roll into balls, cover with plastic wrap and let rest for 10 minutes.

Round it again and place it in the mold (if there is no mold, place it directly in the baking pan).

Put the dough into the oven and select the fermentation program. The measured temperature is 38.5°C and the time is 35 minutes.

Take out and brush a layer of egg wash on the surface of the dough. Don't brush too much. The dripping egg wash will deepen the color of the bottom of the bread. At the same time, preheat the oven to 130 degrees for upper heat and 160 degrees for lower heat.

On the bottom floor of the oven (place it directly on the oven floor), the actual measured temperature of the oven is 130 degrees, then bake at 160 degrees for 22 minutes (there will be a slight temperature error during the baking process). After coloring, lower the heat or cover with tin foil.
