Prepare materials.

Prepare two eggs, beat them, add salt, pepper and cooking wine and mix well.

Wash the bitter melon, remove the stems, cut in half, remove the pulp, first cut into long strips, and then into small slices.

Cut green onions into small pieces.

Dice red bell pepper and set aside.

Add bitter melon slices and chopped red pepper to the eggs and continue to mix.

Heat a pan, pour in the bitter melon and egg liquid, and slowly fry over low heat until the bottom is solidified.
