Cut the ribs into pieces and wash. (I’m not good at knife skills, so of course I asked the boss to cut it for me when I bought it at the meat stall!)

Mince the ginger, mince the garlic cloves, and cut the green onions into flowers.

Fry the ribs slightly until the ribs are slightly brown.

Add ginger slices and water. The water should cover the ribs. You can add more.

Add dark soy sauce and appropriate amount of salt.

When the ribs are boiling and foam appears, use a spatula to remove the foam. (Those who are willing to do this step can also directly blanch it with water and discard it. I personally feel that if the ribs are boiled and poured out the water, some nutrients will be lost, so I did not use the blanch method. The beholder sees the beholder, the wise see the wisdom, just do it as you like, don’t force it!)

Cover and simmer. (It’s best not to cover the pot tightly, otherwise the soup will overflow, and you have to take the lid frequently. I didn’t cover it all the way because it was troublesome. It’s best to stew the ribs in a wok until the water dries out three times before the ribs become tender, which takes about 40 minutes. If you have a pressure cooker at home, it will be faster to use a pressure cooker, as long as the ribs are cooked until they are not hard.)

I added water to the ribs 3 times and cooked until the water was almost dry. The hardness of the ribs was suitable for my family to eat, so I didn't continue to simmer it. This step depends on your own situation.

Add chili powder. (The chili noodles I always prepare at home are not very spicy, and are bright red. There is a kind of chili noodles that are orange-red and will be spicier. You can set aside according to your favorite taste. I use 2 tablespoons of chili noodles.)
