Soak the ribs in cold water for an hour, then put them in the pot.

After boiling over high heat, remove, rinse with cold water and drain

Cut the ginger into slices and set aside.

Heat oil in a pan, add rock sugar and set over medium heat. After the sugar has melted, stir continuously.

When the rock sugar turns amber, add the ribs and ginger slices and stir-fry a few times.

Add thirteen spices, appropriate amount of cooking wine, soy sauce, and a small amount of salt. Stir fry.

Heat water until the ribs are covered and cook over medium-low heat for 30 minutes. When the soup is gone, take it out of the pot.
