Alternative cake decoration-chocolate roses
Overview
I think it is necessary to say first that this chocolate rose is the most classic decoration method for tiramisu except using a mold to sprinkle powdered sugar. The method is the same as another method of fondant roses (which I mentioned last time). The difference is that fondant roses are usually made with a round mold and a sponge to press and thin slightly. Chocolate roses are simpler in terms of technology. However, whether you are making fondant roses or chocolate roses, the requirements are clean and dry! The main thing is to prevent sticking... Fondant can use some white oil at least, but chocolate can't do anything~ For chocolate, I used Dove Black, which is the 66% kind in 43 grams. I left a small piece for me to eat. I plan to try milk chocolate next time, it will definitely taste better. I recommend buying syrup. Homemade fondant paste also requires syrup, and it must be corn syrup imported from Korea... Of course, if you are making chocolate, glucose syrup, corn syrup or even maltose syrup will work.

Ingredients
Steps
-
Melt the chocolate in a container with water
-
Add syrup to the melted chocolate, stir well and cool, but do not put it in the refrigerator (if the room temperature exceeds 20 degrees, it is recommended to reduce it to 11G)
-
After cooling until it is ready to be rolled into a ball, roll the chocolate into several soybean-sized chocolate beans
-
Clamp a chocolate bean between two pieces of oil paper and use a rolling pin to roll the chocolate into a round or nearly round piece. It should not be very thin and the thickness should not exceed 0.8MM. 0.5MM is better
-
Use chocolate to make a drop-shaped stamen based on the size of the first piece
-
Wrap the chocolate on the stamens, no adhesive is needed
-
From the second piece, press the edge slightly outward to a certain extent
-
Piece by piece, outwards, the greater the curvature of lamination, the greater the arc of the rose petals. The number of rose petals depends on your requirements for the size of the rose. I made about 12 petals, about 5 cm in diameter, and the maximum can be about 18 petals. If it is larger, it will be difficult to operate and the outer petals are larger than the inner petals
-
Finally, reshape and pinch the bottom so that the rose can stand
