Trying to make my own Xiamen snack - coconut cake
Overview
This year, the hospital organized a trip to Xiamen. I thought the coconut cakes that our colleagues in the department brought back from Xiamen were very delicious. I have always wanted to try making them myself. Unfortunately, there are no coconut milk sellers here, but online shopping nowadays can really meet all kinds of needs. I bought them directly. I tried one two days ago. Ha, it’s okay. Although it’s not as delicious as the ones sold, it’s eighty-like and not as sweet!

Steps
-
The raw materials are as shown in the picture, but there are less eggs, haha
-
Melt the butter and sugar in the main ingredients over water until it becomes liquid
-
Then add the egg liquid in the main ingredients, mix well, then pour it into the sifted low flour, mix into a dough, and let it rise for 20 minutes. This is the crust part.

Cake filling: Heat the butter and sugar in the ingredients over water to melt. Pour in the egg liquid while it is still warm and stir evenly
-
Add coconut milk and mix well
-
Finally add the coconut, cake flour and baking powder
-
Mix well and set aside
-
Divide the risen dough into 10 equal portions. I only took photos of six portions because the baking tray bakes six at a time
-
Put a piece of dough into the tart mold and knead it like a tart crust
-
The kneaded tart crust should have been made using a chrysanthemum mold, so that it would look more like it. Unfortunately, I didn’t have one, so the baked ones weren’t as beautiful as the ones sold by others.

Pour in the pie filling

Preheat the oven in advance. After preheating, put the coconut cake into the oven and bake it at 190 degrees for half an hour

After leaving it overnight to recover the oil, it tastes very good. It’s very similar. I love it! I’ll make it next time and bring it to my friends to try my new snacks, haha
