Grilled eggplant
Overview
I have made this roasted eggplant before, but this time it was easier to do. It's an improvement. The oil-less version is healthier.

Cut the eggplant into hob pieces

Put oil in the pot, add eggplant and stir-fry, stirring constantly

Stir-fry until the eggplant becomes soft, set aside and set aside

Add additional oil to the pot, sauté the chopped green onion, pour in the tomatoes, and stir-fry

Pour in the fried eggplant

Pour in the sauce prepared with: rice vinegar, sugar, light soy sauce, and salt. Simmer for 2 minutes. Ready to serve
