Stir-fried sword beans with minced meat
Overview
I bought a pound of sword beans on Sunday. I fried them once and thought they were quite delicious. I also had a meal where I fried the minced meat. After frying, I took it to pick up the beans. I put them in the pot but didn't shovel them out. They turned yellow when they came back, which didn't look good.

Wash the sword beans and slice them into slices. You can tear off the ribs on both sides. If you can't tear them out, it means the sword beans are very tender and there is no need to tear them.

Prepare some ginger and garlic. I thought there was too much minced meat for frying other vegetables, so I shoveled it out and kept it.

Heat oil in a pan, add ginger and garlic and sauté until fragrant.

Add some light soy sauce and sugar and continue frying.

Stir-fry until the sword beans change color, continue to stir-fry, you can lower the heat, or add a little water, it is safer to cook the beans thoroughly. It’s okay to fry until soft.
