Overview
This lotus root is sweet and sour, very appetizing. So occasionally I will fry it for my baby, as long as the soup is more and the time is longer, it will be fine. Lotus root contains starch and protein and is suitable for the elderly and children. Eating it can improve immunity.

Peel and cut the lotus root into pieces, blanch it in boiling water, you can cook it for a longer time, but do not cook it in an iron pot as it will turn black.

Two spoons of white vinegar, three spoons of sugar, one spoon of dark soy sauce, and a small spoon of salt. Add a little water to make juice and set aside.

Water starch is ready.

Put oil in the pan, when it is hot, add the diced lotus root and stir-fry.

Pour in the sweet and sour sauce, simmer over low heat, then pour in the starch water to reduce the sauce.
